Apple Baking
Fall is in the air which means it is a popular time for my clients to want family pictures. This year Indigeny Reserve has been the hot location choice. I have been taking advantage of being out on their farm and stocking up on juicy apples.
Right now their honey crisp apples are in season. This type of apple is great for baking, so naturally I have not only been putting these in the kids lunches but using them to bake as well. The hit goodie in our house were the apple crumble muffins.
Sometimes I am good with recipes but other times I just wing it, this was one of those times.
I used a basic gluten free muffin recipe from one of my cookbooks and then skinned and chopped up two apples. Next I sprinkled in some cinnamon and nutmeg to taste. For the topping I chopped 6 tablespoons of cold butter, one cup of coconut flour, 1/2 cup of brown sugar, and more sprinkles of cinnamon. Sorry this is not a more accurate recipe, but you get the basic idea. Pinterest probably has some great recipes. I must say for "winging it" they were pretty delicious.
